Apios Overview
Apios is a small genus of around 8 perennial vine species distributed across North America and Asia. Some species have edible tuberous roots, similar to potatoes but nuttier and this genus is commonly called potato-bean. Some species are listed as threatened and others are farmed, they are broadly considered to be an undomesticated crop. Their flowers are small, scented, purple-red-pink in colour and interestingly shaped, slightly similar to wisteria flowers.
