Dandelion Cookies: Eat your Enemies

Dandelion Cookies

These are delicious they are sweet and healthy and no-one will guess that you are cooking with dandelions unless you tell them
Preparation 10 minutes. Cooking time 15 minutes.


½ a cup of oil
½ a cup of honey (clear)
2 eggs
1 teaspoon of vanilla extract
1 cup of plain flour
1 cup oatmeal
½ a cup of dandelion flowers


Preheat the oven to 190°C
Mix the oil, honey together and add two beaten eggs and vanilla essence
Lightly oil a baking tray and drop small batches of the batter mix onto the tray. Bake for 10- 15 minutes until lightly golden.
