Chicory Overview

Small genus of around 10 bushy perennial herbaceous plants favoured for their pretty blue-purple, sometimes white or pink flowers. It's also grown for its leaves and roots, which are both used in various culinary purposes. It can commonly be found growing along roadsides in Europe, but has been naturalised in North America.
